Easy Chicken Tortilla Soup

This quick chicken tortilla soup recipe uses pre-made ingredients for a quick and easy delicious soup

Ingredients
  

  • 2 32 oz Chicken Stock
  • 2 cans Fire Roasted Tomatoes
  • 1 Rotisserie Chicken shredded
  • 3 bell peppers red, yellow & orange
  • 1/2 large onion diced
  • 1/2 Poblano pepper diced
  • 3 cloves garlic
  • 1 tbsp cumin
  • 2 tbsp chili powder
  • 1 lime
  • Julios Tortilla Chips
  • 1/4 cup grated cheddar cheese
  • 1/2 avocado sliced

Method
 

  1. Saute onion, garlic, bell pepper and poblano until soft
  2. Add chicken stock & tomatoes
  3. Simmer for 15 minutes
  4. Add shredded chicken and simmer another 15-20 min
  5. Serve immediately with corn tortilla chips, sliced avocado, cheese and squeeze of lime.
  6. Or let cool and then portion into 2 cup Souper Cubes (should make 4) to freeze
